Lavender Energy Bites

It’s pretty rare that you would open my fridge and not find a jar of energy balls in there. With a toddler in constant motion, who pretty much eats from dawn until dusk, these are my favourite snacks for Jude to eat at home or on the go. A staple in our household are these bites from my friend at Insightful Bite, but as with most toddlers, Jude’s preferences are constantly changing so I’m always on the hunt for new flavours to add to give our energy bites some variety.

The bites in this recipe are full of the following amazing ingredients:

Lavender: Lavender is most commonly used for its aromatic affects on stress, insomnia and anxiety, but the flowers are also edible and contain vitamin A, helpful for supporting eye health. One serving of lavender also has 2 mg of iron and contains several phytochemicals and antioxidants, making it a great addition when making energy bites for toddlers, or nursing mommas.

Cashews: Cashews contain essential fatty acids, that have been linked to a decreased risk of cardiovascular disease. They are high in minerals like zinc, iron, manganese, copper and are a good source of protein.

Chia Seeds: Chia seeds are a great source of protein, fibre and omega-3 fats. They also contain zinc, manganese, magnesium, phosphorus, and B vitamins (1, 2 & 3). They have also been found to be a great source of antioxidants, useful for helping the body fight off free radicals.

Raw Honey: Raw honey contains amino acids, vitamins and antioxidants which are helpful in supporting the immune system. It is also a natural antibacterial and can be extremely affective for soothing cough and colds.

Note - for kiddos under the age of 1, sub raw honey for maple syrup

Bee Pollen: Bee pollen is packed with healthful benefits including, protein, essential fatty acids, calcium, phosphorous, iron, copper, zinc, manganese and more. It also contains a small amount of water soluble vitamins (B1, B2, B6 & C). Recent studies have found bee pollen to be a powerful antioxidant, supporting the immune system and promoting healing.

Packed with goodness and flavour, these lavender energy bites are so great to have on hand for busy folks and hungry toddlers.

Ingredients:

  • 1 cup cashews

  • 4-6 dates depending on your sweet tooth

  • 1 tsp dried lavender flowers

  • 2 tsp chia seeds

  • 2 TBSP rolled oats

  • 1 tsp bee pollen

  • 1 TBSP coconut oil

  • 1 TBSP lemon juice

  • Zest of half a lemon

Add cashews into a food processor and blend until they are almost powdered, then add the remainder of the ingredients and blend until smooth. Roll into balls and store in an air tight container in the fridge for a up to a week, or in the freezer for 3 months. Makes 10 - 12 balls.
