Easy Blender Latte

Okay, so if you haven’t noticed I’m a little obsessed with putting coffee into a blender. This version is a spin on Bulletproof coffee that uses high fats to help increase your energy, and hey, it helps that it tastes pretty good too! Whenever we do brunch, my girlfriends are always asking me to make this, but lets be serious, I make it everyday for myself.

I’ve recently switched to decaf coffee to try and limit my caffeine intake, but you can use whatever brand of coffee you like best. I love the Salt Spring Decaf or both the decaf and caffeinated varieties from Kicking Horse Coffee.

This coffee is very easy to make, and you can create so many variations depending on your mood.

Ingredients:

2 cups brewed coffee (I use Salt Spring Decaf)

2 tbsp coconut oil (for non vegan option use organic Ghee)

2 tbsp full fat coconut milk from a can (you can add more if you like your coffee extra creamy)

To Make:

Add all ingredients into a blender and whip on medium or high, this will get the coconut oil nice and frothy. Pour into your cups and drink hot.

This recipe makes two cups, but is easily cut in half if you’re making coffee for one. My husband loves a little sweetener added, so when I’m making this for him, I add a little maple syrup, splash of vanilla and a sprinkle of cinnamon.

In all honesty, I prefer this latte to anything store bought. I hope you enjoy it too.
